  • 1 Litre filtered water
  • 1 Tbspn organic green tea leaves
  • 1/4 cup organic raw sugar
  • 1/2 cup kombucha from a previous batch


  1. Boil the water.

  2. Make up the tea in a jug or large jar

  3. Allow to steep until it becomes room temperature.

  4. Strain into a large jar, leaving room at the the top.

  5. Add the 1/2 cup of kombucha and SCOBY.

  6. Cover with a folded tea towel and secure with an elastic band.

  7. Store away from direct sunlight for a week or until brewed to your taste.

  8. Once the brew is to your taste, carefully pour / strain into a bottle, leaving about half a cup of kombucha and the SCOBY to use for the next batch.
